Tonight we tried Mac's Speed Shop located in Greensboro on Battleground ave.  The name sounds more like a name for a motorcycle or car shop and for good reason.  Mac's Speed shop labels itself as a Beer, Bike and BBQ joint.  It is their slogan.  For those that are scared off by the idea of eating at a biker bar.....donot worry.  I have been to real biker bars and this is nothing like that.  Mac's Speed shop is a chain of about 6 restaurants around the Carolinas  that has decent food in a very male-oriented atmosphere.  

 The interior and exterior have the appearance of a converted garage with bay doors and even a covered parking area where the walls of the steel building have been removed.  The interior is freshly and cleanly updated with bar height top tables with several big screen TV's playing sports.  The interior is professionally decorated in a very male oriented decor.  

There was a large outdoor seating area that would be pleasant in the summer, but not during our visit in December.

The crowd at Max's was very un-biker like.  There were tables of families, couples and even several office parties. So don't let the name or concept scare you off.  It is a casual restaurant with BBQ and a great beer list.

The menu was interesting and very different for a Carolina Based BBQ Joint.    They have included some very un-Carolina type  items that are not commonly seen here such as Brisket, Beef Ribs, Smoked Sausage and much more.  There were plenty of things that peaked my interest and overall it was a fairly creative menu for a BBQ Joint.

We started off with Mac's Speed Shop's Wing Digs Chicken wings.  Mac's did an excellent job of being creative with the wings.  The fried and drowned wings get a bit tired.  Mac's wings are Grilled and NOT FRIED with a light smokey flavor. They had a nice selection of sauces, Chipotle, Honey BBQ, Red BBQ, Teriyaki, SC Mustard, Smokin' Burnout, Hot Classic Buffalo and a dry rub.

These wings were original and I felt some of the best wings in the area.  They had great flavor, slightly smokey with grilled notes.  However, being smoked, the skins are a bit soggy...It would have been nice to put them over a high flame for a few minutes to crisp up the skins.  Regardless.  Well done!

Next, we had Max's Speed Shop's combo platter which allowed us to try 4 of their meats.  We choose the pulled pork, St. Louis Ribs, Beef Brisket, and the beer can chicken.  For sides, we had the beans and onion rings.

Max's Speed Shop's pulled pork was very NC.  It was moist and flavorful and very typical of the better BBQ joints in the area.  

Max's Speed Shop's St. Louis Ribs were some of the best ribs I have had in the area.  Most ribs are prepared a day ahead due to the long smoking time and are refrigerated and reheated.  Thus, they get a typical warmed over flavor that I personally find to be strong.  Some people are more sensitive to warmed-over flavors, and I am one of them....  Max's had little to no warmed over notes, so they did well.  The ribs did have a slight phosphate flavor which is typical of an injected meat.  Injected meats have a brine injection that makes the meat juicier.  Phosphates help retain the moisture and fat to make the meat even moister, but the phosphates have a distinct flavor.  Overall, the ribs were excellent, moist and very little warmed over notes, good but not overpowering smoked notes.  

Max's Speed Shop's brisket was not the high point on the plate.  The brisket was a bit tough and dry.  Toughness is from undercooking or cooking at too high a temperature.  Tough meats like brisket need to be cooked low and slow to give time for the collagens to break down.  The dryness is most likely from the meat sitting too long and it just dried out.

Max's Speed Shop's Beer Can Chicken had great grilled flavor.  The meat was a little on the dry side, but overall excellent.

The sides were mixed.  Beans, very good with nice meaty notes and the onion rings had promise.  The onion ring batter was crispy and was very flavorful.  They were just luke warm and seemed as if they were cooked 15-20 minutes ago.  If they were fresher out of the fryer, they most likely would have been excellent.

Overall, I liked Max's Speed Shop.  Not everything was perfect, but they had potential and lots of things on the menu I would like to try.  We will be back to try more.
